Baked Corn Muffins
Ingredients:
- 1/2 cup butter, softened
- 2/3 cup sugar
- 1/4 cup honey
- 2 eggs
- 1 cup flour
- 1 cup cornmeal
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 cup milk
- 1/4 cup sour cream
- Optional: 3/4 cup canned corn kernels
Directions:
- Preheat oven to 400 degrees F. Grease or line 12 muffin cups with non-stick cooking spray.
- In a medium mixing bowl, whisk butter and sugar with a whisker. Then, add honey and eggs, mix until blend. Mix in flour, cornmeal, baking powder and salt, blend thoroughly. Stir in milk, sour cream and corn kernels, until just blend.
- Spoon batter into prepared muffin cups. Bake for 20-25 minutes until golden brown.
