The Burdock root is very low in calories; provides about 72 calories per 100 g. Burdock is very good source of many non-starch polysaccharides such as inulin, glucoside-lappin, mucilage...etc that help act as good laxative. In addition, inulin acts as prebiotic helps reduce blood sugar level, weight and cholesterol levels in the blood.
Simple ingredients:
- 1 lb. Lean beef, cut into cubes
- 1 small fresh ginger, sliced
- 1 stick fresh Burdock root, peel the skin and sliced
- water, enough to cover the meat and make broth
- Salt and ground black pepper to taste
- Optional: Rice noddle and green leaf vegetables
- In a large stockpot, bring the water to boil. Add ginger, beef cubes, and burdock root. After bring to boil, reduce the heat to medium low and simmer for few hours until the meat turns soft. Add salt and pepper to your taste.
- Soup is ready to eat...I add cooked rice noddle and green cabbage to my hot soup and become one of my delicious and healthy lunch.
