Pumpkin Crunch
Ingredients:
- 1 large can Pumpkin
- 1 box Yellow Cake Mix
- 1 large can Evaporated Milk
- 2 sticks Margarine, melted
- 3/4 cup sugar
- 1/4 tsp. cinnamon
- 1 cup nuts, chopped
- 3 eggs
Directions:
- Preheat over at 350 degrees F.
- Line 9x13 pan with parchment paper and spray no-stick oil.
- Mix Pumpkin, milk, sugar, eggs and cinnamon with a whisker, then pour into the prepared pan. Pour a box of yellow cake mix over the pumpkin mixture. Spoon cooled margarine and nuts.
- Bake at 350 degree F for 30-45 minutes.
- After cool, turn it upside down. Remove the parchment paper and cut to the size of bars that you desire. Refrigerated before serving. Also you may top with cream cheese frosting or powdered sugar before serving.
