Strawberry Cupcake



Ingredients:
Ø  1 box Strawberry cake mix
Ø  1 box strawberry instant pudding, small box
Ø  1 cup sour cream
Ø   1/2 cup oil
Ø  ½ cup warm water
Ø  4 eggs
Ø  1 can Strawberry pie filling or topping
Cream Cheese Frosting:
Ø  2 (8oz) packages cream cheese, softened
Ø  1 cup butter, softened, (2 blocks)
Ø  2 cups powder sugar
Ø  2-4 Tablespoons of sauce from strawberry topping
Directions:
·         Preheat oven to 350 degrees. Line the wells of two cupcake pans with 24 paper liners.
·         In a large bowl, mix the cake mix, pudding, sour cream, water, oil and eggs with an electric mixer on high speed for 2 minutes. Fill the prepared cupcake liners half full, add one strawberry in each cupcake liner. Then fill the rest of the batter evenly to each cupcake liners.
·         Bake 16-20 minutes in the preheated oven, or until a toothpick inserted in the center of the cake comes out clean. Cool 10 minutes in pans. Remove from pans, and completely cool on racks.
·         To make foresting in a small bowl, mix cream cheese, butter and powder sugar with an electric mixer until smooth. Then, add strawberry sauce till the pink color as you desire. Blend thoroughly until creamy. Frost the cakes.
