Red Velvet Cheesecake Cups

Ingredients:
·         8 oz. Cream Cheese
·         ½ cup sugar
·         1 Egg
·         ½ tsp. vanilla
·         ½ tsp. Lemon juice
·         2 cups Red Velvet Cake Mix
·         4 tsp. Butter, melted
Directions:
1.     In a small bowl, beat cream cheese and sugar together with a hand mixer. Add vanilla, lemon juice and egg. Beat well until creamy.
2.    Line 8-10 cupcake liners in a cupcake pan, spray with oil. Preheat oven at 350 degrees F.
3.    Fill the cupcake liners 1/3 full with cream cheese mixture. Sprinkle the Red Velvet cake mix over the cream cheese mixture. Fill the cupcake liners to 2/3 full. (Don’t fill up to the top. Cake mix will expand.) Then, spoon the melted butter over the cake mix.
4.    Bake at 350 degrees F for 25 minutes. Cool in the refrigerator overnight or until cheesecakes set.
5.    Remove the cupcake liners before serving. You may use your favorite topping, such as strawberries, blueberries or cherries.
