Cookie Pies

Makes: 12 servings
Ingredients:
·         1 box of refrigerated 9 inch pie crusts (2 rolls in a box)
·         24 chocolate sandwich cookies (like Oreo cookies)
·         1 cup creamy peanut butter
·         2 Tbsp. granulated sugar
·         1 egg yolk and Cooking oil spray
Directions:
1.     Preheat oven to 350 degrees F and spray 12 muffin cups pan with non stick cooking spray.
2.    Unroll pie crusts and cut 12 round pieces with the 2-inch biscuit cutter. Press into the prepared muffin pan.
3.    Spread 1 Tbsp. of peanut butter over each cookie, and then stack 2 cookies on top of each other. Place 2 stacked cookies into pie crusts. With remains pie dough, cut long thin strips to prepare lattice top like in photo.
4.    Brush egg yolk over tops, and then spray with cooking oil spray over each cookie pie. Sprinkle generously with sugar. Bake 22-24 minutes until golden brown. Let cool then remove from the pan.
