Pumpkin Bread - the BEST ever

 


I found  this World’s Best Pumpkin Bread Recipe on Pinterest by thefrugalgirl.com and it’s the BEST ever! I change the some of ingredients since I don’t like too sweet, also add a layer of cheesecake since I love cheesecake with pumpkin bread 😊 it’s easy to make!

Ingredients


  • 2 cups Libby’s 100% Pure Pumpkin 
  • 2 cups Granulated {White} Sugar
  • 1 cup Canola or Vegetable Oil
  •  cup milk
  • 4 large Eggs
  • 3⅓ cups All-Purpose Flour
  • 2 teaspoons Baking Soda
  • 1.5 teaspoons Salt
  • 1 teaspoon Ground Cinnamon
  • 1 box Philadelphia no back cheesecake 
  • 1 cup powered sugar




Easy to make:

  • Preheat oven to 350 degrees F.
    Add powered sugar in the cheesecake box, mix well and set aside.
  • Mix Pumpkin, Sugar, Oil, Milk, and Eggs in large mixing bowl until well combined.
  • In medium mixing bowl, combine Flour, Baking Soda, Salt, Cinnamon, then whisk until well combined. 
  • Then gradually pour flour mixture into large bowl of pumpkin mixture, and stir well to combine completely.
  • Lay a piece of parchment paper on a 11x9 baking pan , spray bottom with Nonstick Cooking Spray.
  • Pour 1/2 of pumpkin bread mixture evenly into pan, layer cheesecake mixture on the top, then pour the rest of pumpkin bread mixture evenly.
  • Bake for 60-90minutes, or until done and a toothpick inserted in center comes out clean. 
  • Allow to cool inside pan completely before removing and slicing.

Found this no baking easy making recipe on WeChat and youTube. Super easy, super simple, super yummy! Attached this video from youTube, and there are many other videos on youTube. You may follow the recipe from the video. I have below measurement that work for me.

You will need...

  • Butter, 1/4 cup (half block)
  • Marshmallows, 1 bag (10.5 oz.)
  • Milk powder, 1/3 cup
  • Nilla wafers mini, 1 box (11 oz.)
  • Nuts, 1/2 cup (any kinds, such as peanuts, walnuts, pistachos, etc. optional)
  • Dried fruits, 1/2 cup, (any kinds, such as mango, strawberry, cranberry, raisins, etc. optional)


Easy to make...

  1. In a large non-stick pan, melt butter on medium heat till melted.
  2. Add marshmallows, stir constantly until all melted.
  3. Add milk powder, mix and stir few more minutes until marshmallows not sticky on the pan. 
  4. Turn off the heat.
  5. Add nuts, dried fruits and cookies, mix and turn well until marshmallows mix wrap around all cookies.
  6. While mixtures are still warm, place in a baking pan (spray oil to avoid sticky on the bottom), press down tight and shaping as you desired. Sprinkle with milk powder and sit to cool. Cut into square pieces to serve.
