Coconut Gelatin Papaya

Ingredients:
·         ¾ cup coconut milk
·         ¼ cup milk
·         1 envelope unflavored gelatin
·         1/3 cup sugar
·         1 medium size papaya
Directions:
1.    Cut papaya in half and take out the seeds.
2.    In a small saucepan, sprinkle 1 envelope gelatin into coconut milk and milk mixture. After the gelatin blooms, turn on the stove to high. Add sugar and bring to boil until dissolve. Stir and cool.
3.    Pour the cooled milk mixture into half papaya and chill overnight or until set.
4.    Peel the skin of papaya and cut in the center to a triangle shape. Serve as cold.
Tip: Substitute with Almond Milk with coconut milk if you like to make Almond Gelatin Papaya.
