Sunshine Pie 太阳饼

Makes: 24 servings.



 


















Ingredients:
  • 1 box Pie Crust, room temp.
Filllings:
  • 1 cup water
  • 1/2 stick of butter (4 tsp.)
  • 1 cup Rice Flour
  • 1 cup Powdered Sugar
  • 1/4 cup Evaporate milk
In a medium saucepan, heat water and butter to boil until butter melted. Turn the heat to low. Add rice flour sugar and milk, stir with a plastic spatula until thicken to a ball. Turn off the heat and let cool.

  1. Lay the pie crust on the cutting board flat. Use the 3-inch biscuit cuter to cut out 10 round pieces from one pie crust. The leftover dough could make 2 more round pieces by hand. Fill the center with the filling and just enough to gather the edges together, pinch to seal. Use the palm of hand to press into a flat circle.
  2. Preheat over to 350 degrees F. Place the pies on a non-stick cookie sheet. Brush the top with evaporate milk. Use a toothpick to poke few holes for pies to breath. Bake for 10 minutes or until golden brown. You may spray oil on the pies after 5 minutes for a shining look.
  3. Cool and service. Great with a cup of milk, tea or coffee.
