Ono Oreo Cheesecake


This is the kind of cheesecake that will melt in your mouth and you will say "Hmmmm...." Easy to make, but it takes time to wait...the flavor ripens and becomes enriched after overnight...worth to wait.

For the Crust:
  • 1/4 cup finely chopped pecans
  • 1 cup crushed Oreo cookie crumbs (use food processor)
  • 2 Tbsp. butter, melted
For filling: (all should be at room temperature)
  • 3 packages cream cheese, 8 oz. each
  • 1 1/4 cups sugar
  • 5 large eggs
  • 1/4 cup flour
  • 2 tsp. vanilla
  • 2 tsp. lemon juice
  • 16 oz. sour cream
  • 10-12 Oreo cookies, separated in half
Make it:
  1. Mix pecans and Oreo cookie crumbs with melted butter. Press into a 9-inches buttered spring form pan. Set in the refrigerator while preparing filling.
  2. Preheat over to 325 degrees F. Place a pan of water on the bottom shelf of the oven (use for water bath baking).
  3. Start by beating the cream cheese with an electric mixer(or stand mixer) until light and fluffy. Keep the mixer on low setting throughout the mixing process.
  4. Add sugar a little t a time and continue beating until creamy.
  5. Add one egg at a time and beat after each egg until well blend.
  6. Add flour, vanilla and lemon juice, mix well.
  7. Add sour cream last, beat and blend well.
  8. Pour the half of the filling into prepared spring form pan. Place one layer of Oreo cookie halves, then pour the rest the filling over the cookies.
  9. Place on the middle rack in the oven. Bake over water bath for 1 hour and 30 minutes. Turn off the oven and leave in the oven until cool down, about another one hour.
  10. Remove from oven, sprinkle with some cookie crumbs as topping. Refrigerator at least overnight to 24 hours for best flavor and texture.


Turkey Meatballs with Spicy Coconut Sauce

This year, I try to find more healthy recipes, eat healthy and clean. When I think back in time, my grandparents lived until 92 years old. They never execise and took many vitamins. They did eat one egg and one glass of milk every morning. They eat rice and noodles with fresh vegetables and meat, they never eat canned food. They never suffered from diebate or high blood pressure. They didn't drink alchol and smoke. Here is one of the Eating Right Rule that I found on theironyou.com


I recently find out that eating low reactive food help me maintain weight, even lose weight. Here is another recipe that I put together with low reactive food. It's not like other no-taste diet food...it's delicious! I didn't measure all ingredents and just free to add any of your favorite amount to your taste.

You will need:
  • 1 can coconut milk
  • 1 whole fresh garlic (good for your longevity), minced
  • 6-8 shitake mushrooms, sliced
  • 10 Turkey meatballs, pre-made and frozen
  • 1 zucchini, cut into small cubes
  • 1 Red bell pepper, cubed
  • chick peas (optional)
  • Seasonings to your taste: salt, ground black pepper, thai red curry or chill pepper paste
Easy to make:
  1. In a medium sauce pan, place coconut milk and minced garlic together, bring to boil. Then turn the heat to medium.
  2. Add mushrooms and meatballs to simmer until turn soft. Add right amound of seasonings to your taste (I like to add more chill pepper paste for spicy flavor).
  3. Add zucchini and bell pepper at last since they are easy to cook.
  4. Don't add too much salt so that you can serve without rice or starchy food.

Oreo Silk Pie

This dessert is delight, silky and light, smooth but with a little crunch...so easy to make.

You will need...
Crust:
  • 1 cup pecans chips
  • 3 Tbsp. sugar
  • 1/2 cup butter (1 stick)
  • 1 cup flour
Cream Cheese layer:
  • 1 package (8 oz.) cream cheese, at room temperature
  • 1 cup powdered sugar (use 1/4 cup less for less sweet)
  • 1 cup whipped cream
Oreo Pudding layer:
  • 1 package of instant Oreo pudding mix
  • 2 cups milk
Last layer:
  • 1 cup whipped cream
  • 2 Oreo cookies, crashed
Make it...
  1. Preheat oven to 350 degrees F. Lay parchment paper on the bottom of a 8x8 or 9x13 baking pan, or spray with no-stick cooking oil.
  2. In a mixing bowl, combine all crust ingredients together and mix until well blend. press the crust mixture into the prepared baking pan. Bake for 20 minutes, cool.
  3. Mix all cream cheese layer ingredients together with an electric mixer, until smooth. Spread over the cooled crust evenly.
  4. Combine Oreo pudding and milk in a mixing bowl. Whisk about 2 minutes until starting thicken. Set aside for 5 minutes, then spread over the cream cheese mixture evenly.
  5. For the last layer, spread whipped cream evenly over the Oreo pudding mixture, then sprinkle crashed Oreo cookies crumbles over the top.
  6. Refrigerate for a couple hours or overnight before serving.



Protein Banana Breads

When you have bananas turning too rip, don't throw them away. It's perfect to use them to make this high protein banana breads...moist, tasty, melt in your mouth and easy to make. Add your choice of fresh blueberries, cranberries, flex seeds, pumpkin seeds, or/and sunflower seeds for more antioxidant...they are all good!

You will need...
Dry ingredients:
  • 1 cup flour (wheat or white)
  • 1/2 cup protein powder
  • 1 cup brown sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. Cinnamon
  • pinch of salt
Wet ingredients:
  • 3 ripped bananas
  • 3 large eggs
  • 1/2 cup butter, melted
  • 1/2 cup cooking oil
  • 1 tsp. vanilla extract
Easy to make...
  1. Mix all dry ingredients in a large mixing bowl with a whisker and set aside.
  2. Combine all wet ingredients in a blender and blend well. Then pour into the dry ingredient mix and whisk until just blend.
  3. Add some blueberries, cranberries, flex seeds, pumpkin seeds, sunflower seeds, even some chocolate chips. Fold them together with a spatula.
  4. Preheat oven to 325 degrees F. Lightly spray no-stick cooking oil on 5-mini loaf pan. (I bought the foil mini loaf pans from Wal-mart for cheap)
  5. Pour the banana bread mixture into the mini loaf pan evenly. Bake for 40 minutes or until a toothpick comes out of the center of loaf is clean.
 

Note: the Banana breads always taste better and more moist after overnight.


The BEST Protein Brownies


I adopted this recipe from http://www.theironyou.com  and I made them...I love it! These are truly amazing brownies, loaded with protein, no flour added. There are many other healthy recipes and tips to help you becoming a better and healthier you.

Ingredients
Makes 16 brownies

1 cup protein powder (either unflavored or vanilla)
¼ cup oats, ground
8 oz (about 1 cup) 70% dark chocolate, coarsely chopped
½ cup butter
1 cup brown sugar
2 teaspoons vanilla extract
4 large eggs
½ teaspoon salt
½ teaspoon baking powder
1 teaspoon espresso powder (optional, to enhance chocolate taste)

Directions

Preheat oven to 350°F (180°C), place a rack in the upper third of the oven. Lightly grease a 9×13-inch baking pan. Line the pan with foil and grease the foil. This will help you remove the brownies.


Whisk together protein powder, ground oats, baking powder and salt and set aside.

Place butter and chopped chocolate in a medium sized heat proof bowl. Place the bowl over a pot of simmering water (making sure that the bottom of the bowl does not touch the water). Stir until the chocolate has completely melted. Remove the bowl from over the boiling water, let mixture sit for a few minutes.

In the meantime, in a large bowl mix sugar, vanilla, espresso powder (if using) and eggs. Whisk until pale and thick.Pour the melted chocolate into the egg mixture. Whisk until batter is smooth.

Add the protein powder mixture all at once and stir by hand until all the dry ingredients are incorporated into the wet ingredients and no flour is visible.

Pour batter into the pan and bake for 30 minutes, until the center is firm and level with sides and a skewer inserted in the center comes out clean. Let cool in pan.

Overnight Kale Apple Salad

 
This simple and healthy salad is so easy to make. It is delicious and help you lose weight, too. I make this at night and take to lunch for next day. It refreshes my day. Enjoy!
 
You will need:
  • Chopped fresh kale, about 3 cups or more
  • 1 apple, any kind, cut into small cubes
  • Cranberries, 1/4-1/2 cup
  • Apple cider vinegar
  • olive oil
  • salt and sugar
Easy to make:
  1. Place chopped kale, cubed apple and cranberries in a medium or large mixing bowl.
  2. Drizzle some olive oil and apple cider vinegar to your taste.
  3. Sprinkle some salt and sugar to your taste.
  4. Mix all together, then storage in a tight covered container in the refrigerator for overnight. Shake few times before service next day.
 

Sauted Scallops with Spinach


Scallops are rich in iodine and great for thyroid health. They are the least reactive of all shell fish and remarkably easy to cook. Organic Spinach is listed as 10% reactive food according to Lyn-Genet Recitas' book "the Plan". This healthy recipe is easy to make and delicious!

Simple ingredients:
  • 1 bunch of Organic Spinach, washed and drained
  • 1 lb. scallops, at room temperature, pat dry with paper towel
  • 4 cloves garlic, minced
  • salt and ground black pepper
  • sesame oil
  • olive oil
Easy to make:
  1. In a large pot, heat water (enough to cover the spinach) to boil. Place the spinach in the boiling water and cook until spinach just turn soft, but still crunchy (about 1-2 minutes). Drain the hot water and rinse with cold water immediately, so that will stop the cooking process and keep the spinach in pretty green color.
  2. Drain the extra water out and place spinach in a mixing bowl. Sprinkle with salt and and sesame oil. Add 2 cloves of minced garlic. Mix with a fork or chopstick and place on the bottom of a plate.
  3. In a saucepan with medium-high heat, saute the scallops and garlic with drizzle of olive oil. Sprinkle with pinch of salt and ground pepper. Saute until each side turns light brown. about 3-4 minutes. Place on the top of a bed of spinach. Enjoy!

Kale with spicy coconut sauce


I found this delicious and healthy recipe from Lyn-Genet Recitas' book named "the Plan". I have tested all other different diet ideas and plans to lose weight and I gained back later. With Lyn-Genet's plan, I eliminate the surprising "healthy" foods that are making me fat, and find the "friendly" food that help me lose weight without exercise. For the beginning of 3 detox days, I have lost 6 lbs! This is one of my favorite recipe...

Simple ingredients:
  • 1 can coconut milk (pls. don't use low-fat)
  • 1 large onion, chopped or sliced
  • 3-4 cloves garlic, chopped
  • 1 Tbsp. Thai red curry sauce
  • 1 heaping Tbsp. brown sugar
  • pinch of salt to taste
  • 1 big bag of chopped kale, about 10-12 cups
  • 4-6 shiitake mushrooms, soften in the water and sliced
Easy to make:
  1. Saute onion and garlic in coconut milk. Add red Thai curry sauce, brown sugar and salt, reduce the heat to simmer for 10-15 minutes. (if you only cook small portion of kale, the sauce will hold for 5 days refrigerated , or can freeze it until ready to use).
  2. Add shiitake mushrooms and kale to the sauce, cook about 10 minutes or until the kale turn soft.

Note: kale and shiitake mushrooms are only 10% reactive foods with our body chemistry. They are "friendly" foods for me and surprisingly help me to lose weight.

Devil Mud Cake

This easy cake is made from boxed Cake Mix, with cookie dough and layer of cheesecake. Let the cake refrigerator for at least an overnight for a moist chocolate cake.

Ingredient for the cake:
  • 1 box Devil Food Cake Mix
  • 4 Eggs
  • 1 cup milk
  • 1 stick butter (1/2 cup), melted
  • 1/2 package of refrigerated chocolate chip cookie dough, break into small pcs.
Preheat oven to 325 degrees F. Line parchment paper on the bottom of a 9-inch spring form baking pan (for easy removal later). Place a bowl of water on the bottom rack in the oven (bake the cake with water bath for moist cake).
Combine cake mix, eggs, milk and butter in a large mixing bowl. Mix with an electric mixture on medium speed for about 5 minutes until well blend and fluffy. Fold in cookie dough pieces.
Pour half of the cake mixture in the prepared baking pan. Bake for about 15 minutes. Meanwhile, prepare the cheesecake layer below.

For Cheesecake layer:
  • 1 package cream cheese, at room temperature
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp. Vanilla extract
Mix cream cheese and sugar with an electric mixer in a small mixing bowl until soften and creamy. Add one egg at a time and vanilla extract, continue to beat until creamy and fluffy.
Pour the cheesecake mixture over the half baked cake layer. Bake for another 15 minutes.
Then, pour the rest of the cake mixture over the cheesecake layer, bake for 20-25 minutes. The center will be soft. Turn off the oven and let the cake cools off in the oven before place in the refrigerator.
After the cake is cooled completely, cover with sarong wrap to keep moist and refrigerator overnight before slice into the desired pieces.

Homemade Facial Mask

 
This mask can be done twice a week. It heals, exfoliates, brightens and moisturizes skin.
 
Simple ingredients:
  • 2 Tbsp Plain Yogurt (Aged one is better, so don't throw away the "expired" yogurt)
  • 1 Tbsp honey
  • 1 tsp Almond oil
Combine above ingredients together. Apply a thin layer of mask to your cleansed face and leave on for 15-20 minutes. Rinse with warm water. Then, you can see the glow on your face and feel the softness of your skin.
Refrigerator the leftover mask until you are ready to use next time.
