I saw this dish on a Chinese TV show and try it...it is so easy to make and delicious! I used salmon here, but you can substitute with others of your favorite fish too. There are different seasoning salmon that are sold in the supermarket, such as BBQ, lemon pepper and plain. I like the BBQ one.
- Steam fish for 15-20 minutes until it is fully cooked. Break salmon into small piece like in the picture below.
- Heat 1 Table spoon of cooking oil in a non-stick pan.
- melt few rock sugar in hot oil (optional).
- add shredded fish and cook until dry and turn golden brown. You can use a fork to separated pieces while cooking. Add pinch of salt and ground pepper to the taste. Before remove from the pan, add some diced green onion.
- Place shredded fish on the top of a bed of white steamed rice. Sprinkle some green onion (optional). Spread some mayo over the salmon rice.
- Before eating it, mix all together like below picture...yummy!
