Simple ingredients:
- 1 bundle of fresh spinach
- Homemade Hoisin Peanut Sauce(see below), including Hoision sauce, peanut butter, honey, salt and hot water.
- Bring a pot of water(just enough to cover the spinach) to boil, and turn the heat off. Place the cleaned spinach in the hot boiling water right away. When the spinach just turn darker green and softer, take them out and rinse with cold water. This will stop the cooking process and keep the spinach with the tender green color and crispy.
- Drain the water out. Place half of the spinach on a bamboo sushi mat, roll like making sushi. Squeeze the water out and keep the spinach tight together. Divide into 4 sections and tie a knot with a long spinach for each section. Cut with a sharp knife and place on a serving plate.
- Drizzle with Hoisin Peanut Sauce and sesame oil (will give a little shine). Sprinkle some sesame seeds for decoration.
Note: Do not eat spinach with Tofu. They are not a good combination due to their contents.
Hoisin Peanut Sauce:
- 1/2 cup peanut butter
- 1/4 cup hot water
- 1/4 cup Hoisin Sauce (reduce to 1/8 cup for less sodium)
- 1 Tbsp. Honey
- Pinch of salt for your taste
This sauce can be also used for many other dishes, such as noddles; dipping sauce for spring rolls, summer rolls, or/and egg rolls; or use as salad dressing, etc. If you like spicy, you may add some hot sauce to your taste.
