You will need...
Dry ingredients:
- 1 cup flour (wheat or white)
- 1/2 cup protein powder
- 1 cup brown sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. Cinnamon
- pinch of salt
- 3 ripped bananas
- 3 large eggs
- 1/2 cup butter, melted
- 1/2 cup cooking oil
- 1 tsp. vanilla extract
- Mix all dry ingredients in a large mixing bowl with a whisker and set aside.
- Combine all wet ingredients in a blender and blend well. Then pour into the dry ingredient mix and whisk until just blend.
- Add some blueberries, cranberries, flex seeds, pumpkin seeds, sunflower seeds, even some chocolate chips. Fold them together with a spatula.
- Preheat oven to 325 degrees F. Lightly spray no-stick cooking oil on 5-mini loaf pan. (I bought the foil mini loaf pans from Wal-mart for cheap)
- Pour the banana bread mixture into the mini loaf pan evenly. Bake for 40 minutes or until a toothpick comes out of the center of loaf is clean.
Note: the Banana breads always taste better and more moist after overnight.
