肉松蛋糕 Dried pork floss cake

I am not sure how to translate this delicious salty and sweet cake. But it is easy to make. I used store bought Angle Food cake. Since Angle Food cake is made of egg whites, they are less fat then regular yellow cake.

Slice the cake or cut into the shapes that you like, round or square, etc. Use a spatula or butter knife, erase the thin layer of mayo on all sides, dip or roll over the cooked dried pork...eat them now...yummy! or you can storage in a container, bring to your family or friend to share.

Those cooked dried pork can be purchased in Asian grocery stores or order online. I do my online asian grocery shopping at huarencun.com sometimes. They offer free shipping with over $75 purchase.

Mochi rice shumai 糯米烧麦

Soak one cup of mochi rice in water for 12 hours. Then add to my shumai receipt with meat. Steam for 15 minutes. Serve with sweet soy sauce for flavor.
Here is a picture before steam...

If you like less rice with more meaty taste, add less mochi rice.
Sweet soy sauce can be purchased at some Asian grocery stores, or you can make you own with equal amount of sugar, soy sauce and water. Heat on stove or microwave until sugar melted. If you like sweeter, add more sugar.

Fried salt & pepper chicken wings 椒盐鸡翅

Who does not know how to make fried chicken wings? I tried this single bone fried chicken wings from daydaycook.com and it is awesome and simple! I fried the whole wing parts before, not as tasty as cut the wing part in half, fry with the single bone on it. All I used are mixing salt, ground black pepper mixing with flour, coat the chicken wing, then deep fried until turn golden brown like the picture above. Serve as hot for better taste.

Chicken with Onion Sauce 葱油鸡

Another easy chicken receipt here! I bought a big bag of chicken wings parts, used drumsticks here and used wing parts for fried salt & pepper chicken wings which will be on my next post. You also can use legs or breast meat, but I like use dark meat here.

Cook chicken in broiling water on high for 20-30 minutes. Add some sliced ginger and cooking wine in the water. Then, turn off the heat, keep cover on and let chicken continue to cook in the hot water until cool. Meanwhile, make the sauce...

Dice green onions, garlic, ginger, put all in a bowl. Add chill pepper if you like spicy. Heat 1 cup cooking oil on stove (add more oil if you cook large amount of chicken). Then pour hot oil over the green onion mix, stir. while still hot, add soy sauce, sugar, salt and ground pepper to taste. Stir and mix well.

After chicken cooked in the hot water, take them out and put into a large bowl of cold water, rinse them out and place on a serving plate. Pour the onion sauce over the chicken...and done!

It can be served warn or old. Good with steamed rice or beer .

Berry Cheesecake Salad

source from MASTERCook

This summer dessert is very simple and easy to make. Also for low-carb diet. I used whipped cream cheese instead of regular one for easy whip and mix, no electric mixer needed. With the original recipe, I think it is too saucy with amount of cream cheese and creamer. So, I only listed the ingredients that are needed, not the amount. You can make as much or as less as you want.

Simple ingredients:
  • Strawberry
  • Blueberry
  • Blackberry or raspberry
  • Whipped cream cheese, plain
  • Vanilla coffee creamer

Easy to make:
  1. Cut strawberries into small bite sizes
  2. In a bowl, whisk cream cheese and coffee creamer together into a think texture. (Add small amount of creamer at a time).
  3. Add all berries and refrigerator to chill for few hours.
