Chinese Pita 肉夹馍

You can use any leftover dish as fillings. I used stir fry broccoli chicken with bacon bites in this picture. Also, you can chop the stewed pork to small sizes and add chopped Chinese parsley, with hot sauce if you like it spicy. Or fill up with scrambled eggs and bacon for breakfast, etc. Taste better to serve hot or warm.

For Pita,
use my Soft Bread Sticks recipe. Make 4-inch round patties and cook in a pan as the pictures below.

For the fillings,
use my Teriyaki Pork Stew recipe. or like the picture shown...
Simple Stir fry Broccoli Chicken: cut chicken into small piece and place in a lightly oiled wok. Brown the chicken until cooked. Add some minced garlic. Then, add chopped broccoli with little water. When broccoli just turn soft, sprinkle pinch of salt, some soy sauce and sugar, or some hot pepper...till you like the taste.

Cut the pita in half and fill up with your favorite fillings. Serve with rice soup as you prefer.

Easy Honey Chicken 蜜汁酥鸡

No need to buy Honey chicken powder mix from the store. You can make this simple, easy and healthy Honey Chicken on your own at home. I like to use boneless and skinless chicken tights for the tenderness. Of course you may substitute with chicken breast for lean eating.

Simple ingredients:

  • 2 skinless and boneless chicken tights, cut into stripes or bite size cubes
  • salt and ground pepper
  • corn starch for coating
  • cooking oil, just enough for pan fry (not deep fry)
  • 1 Tbsp. fresh garlic, minced
  • 1 Tbsp. light soy sauce
  • 1 Tbsp. Honey

Easy to make:

  1. Seasoning the chicken with pinch of salt and ground pepper. Coat seasoned chicken with corn starch all over.
  2. Heat cooking oil in a medium wok till hot. Pan fry the chicken on all sides until golden brown. Add garlic and stir for a minute till smell the fragrance of garlic. Then, add soy sauce and stir to coat the color on the chicken pieces. Do not add any water. Add honey at last, stir until sauce reduced and glazed on all chicken pieces.
  3. Serve with steamed rice...yummm...

Teriyaki Pork Jerky 蜜汁肉干

This homemade meat jerky can be used pork or beef. It is easy to make, but need little more patient while baking. I cannot take pictures of my own jerky since my kitchen lights are broken, so I adopted these pictures. I change the original recipe a little, but turn out tasty and yummy!

Simple ingredients:

  • 1 lb. ground pork or beef
  • 1 Tbsp. dark soy sauce
  • 3 Tbsp. light soy sauce
  • 1 Tbsp. fish sauce
  • 3 Tbsp. cooking wine
  • 1 Tbsp. sugar
  • 1 Tbsp. honey
  • pinch of salt and ground pepper
  • extra honey for brush on

Easy to make:

  1. Combine all ingredients, except meat and extra honey, mix all together. Then, add meat into the sauce, stir in one direction until well combined. Cover and refrigerate at least 3 hours or overnight.
  2. Preheat oven to 400 degrees F. Cover the baking pan with foil for easy cleaning after baking.
  3. Place about 1/2 cup marinated meat on a sheet of plastic wrap and cover with another wrap on the top. Flatten with a rolling pin. Remove the thin meat sheet from the wraps and place on the baking pan.
  4. Set oven on broil, baking for 10-15 minutes. Drain the extra liquid from the pan and turn the meat sheet on the other side. Brush with honey and bake another 5-10 minutes. Stay next to oven and keep close eyes to avoid burning. Then, turn the meat again and brush other side with honey, bake 5 more minutes. If you like more chewy, bake a little longer...but don't burn them :)
