Oreo Silk Pie

This dessert is delight, silky and light, smooth but with a little crunch...so easy to make.

You will need...
Crust:
  • 1 cup pecans chips
  • 3 Tbsp. sugar
  • 1/2 cup butter (1 stick)
  • 1 cup flour
Cream Cheese layer:
  • 1 package (8 oz.) cream cheese, at room temperature
  • 1 cup powdered sugar (use 1/4 cup less for less sweet)
  • 1 cup whipped cream
Oreo Pudding layer:
  • 1 package of instant Oreo pudding mix
  • 2 cups milk
Last layer:
  • 1 cup whipped cream
  • 2 Oreo cookies, crashed
Make it...
  1. Preheat oven to 350 degrees F. Lay parchment paper on the bottom of a 8x8 or 9x13 baking pan, or spray with no-stick cooking oil.
  2. In a mixing bowl, combine all crust ingredients together and mix until well blend. press the crust mixture into the prepared baking pan. Bake for 20 minutes, cool.
  3. Mix all cream cheese layer ingredients together with an electric mixer, until smooth. Spread over the cooled crust evenly.
  4. Combine Oreo pudding and milk in a mixing bowl. Whisk about 2 minutes until starting thicken. Set aside for 5 minutes, then spread over the cream cheese mixture evenly.
  5. For the last layer, spread whipped cream evenly over the Oreo pudding mixture, then sprinkle crashed Oreo cookies crumbles over the top.
  6. Refrigerate for a couple hours or overnight before serving.



Protein Banana Breads

When you have bananas turning too rip, don't throw them away. It's perfect to use them to make this high protein banana breads...moist, tasty, melt in your mouth and easy to make. Add your choice of fresh blueberries, cranberries, flex seeds, pumpkin seeds, or/and sunflower seeds for more antioxidant...they are all good!

You will need...
Dry ingredients:
  • 1 cup flour (wheat or white)
  • 1/2 cup protein powder
  • 1 cup brown sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. Cinnamon
  • pinch of salt
Wet ingredients:
  • 3 ripped bananas
  • 3 large eggs
  • 1/2 cup butter, melted
  • 1/2 cup cooking oil
  • 1 tsp. vanilla extract
Easy to make...
  1. Mix all dry ingredients in a large mixing bowl with a whisker and set aside.
  2. Combine all wet ingredients in a blender and blend well. Then pour into the dry ingredient mix and whisk until just blend.
  3. Add some blueberries, cranberries, flex seeds, pumpkin seeds, sunflower seeds, even some chocolate chips. Fold them together with a spatula.
  4. Preheat oven to 325 degrees F. Lightly spray no-stick cooking oil on 5-mini loaf pan. (I bought the foil mini loaf pans from Wal-mart for cheap)
  5. Pour the banana bread mixture into the mini loaf pan evenly. Bake for 40 minutes or until a toothpick comes out of the center of loaf is clean.
 

Note: the Banana breads always taste better and more moist after overnight.


The BEST Protein Brownies


I adopted this recipe from http://www.theironyou.com  and I made them...I love it! These are truly amazing brownies, loaded with protein, no flour added. There are many other healthy recipes and tips to help you becoming a better and healthier you.

Ingredients
Makes 16 brownies

1 cup protein powder (either unflavored or vanilla)
¼ cup oats, ground
8 oz (about 1 cup) 70% dark chocolate, coarsely chopped
½ cup butter
1 cup brown sugar
2 teaspoons vanilla extract
4 large eggs
½ teaspoon salt
½ teaspoon baking powder
1 teaspoon espresso powder (optional, to enhance chocolate taste)

Directions

Preheat oven to 350°F (180°C), place a rack in the upper third of the oven. Lightly grease a 9×13-inch baking pan. Line the pan with foil and grease the foil. This will help you remove the brownies.


Whisk together protein powder, ground oats, baking powder and salt and set aside.

Place butter and chopped chocolate in a medium sized heat proof bowl. Place the bowl over a pot of simmering water (making sure that the bottom of the bowl does not touch the water). Stir until the chocolate has completely melted. Remove the bowl from over the boiling water, let mixture sit for a few minutes.

In the meantime, in a large bowl mix sugar, vanilla, espresso powder (if using) and eggs. Whisk until pale and thick.Pour the melted chocolate into the egg mixture. Whisk until batter is smooth.

Add the protein powder mixture all at once and stir by hand until all the dry ingredients are incorporated into the wet ingredients and no flour is visible.

Pour batter into the pan and bake for 30 minutes, until the center is firm and level with sides and a skewer inserted in the center comes out clean. Let cool in pan.

Overnight Kale Apple Salad

 
This simple and healthy salad is so easy to make. It is delicious and help you lose weight, too. I make this at night and take to lunch for next day. It refreshes my day. Enjoy!
 
You will need:
  • Chopped fresh kale, about 3 cups or more
  • 1 apple, any kind, cut into small cubes
  • Cranberries, 1/4-1/2 cup
  • Apple cider vinegar
  • olive oil
  • salt and sugar
Easy to make:
  1. Place chopped kale, cubed apple and cranberries in a medium or large mixing bowl.
  2. Drizzle some olive oil and apple cider vinegar to your taste.
  3. Sprinkle some salt and sugar to your taste.
  4. Mix all together, then storage in a tight covered container in the refrigerator for overnight. Shake few times before service next day.
